ARD Resolution Issues

I have a 2015 rMBP docked to 27" Thunderbolt Monitor. I also have a headless 2016 Mac Mini.

I purchased Apple Remote Desktop so I can access the Mini without a monitor and run in full screen on the 27" monitor.

There was an issue where I see double cursors. I purchased CompuLab 4K Display Emulator (fit-Headless 4K) in order to trick the Mini into thinking it had a monitor in order to not have the double cursor issue.

The problem is I cannot change the resolution on the Mini to match full screen on the 27" display. I have some options for scaled resolution but not the correct one; even when holding option (others said they had other resolution options appear when doing this).

If I removed the display emulator then the resolution of the Mini becomes a square and isn't adjustable.

Am I missing something? Why is it not possible to get this to work between two Macs? All I want to do is screen share with my Mini and be able to put that window as full screen and have it fit without massive black borders around it or a double cursor.

Please help.

Thanks,

Ethan
